large onion, very finely chopped

Heat two tablespoons of oil in a pan and fry the onion with a pinch of salt for 5 minutes or until transparent.

Add the washed, drained spinach to the pan. Cook until soft.

Remove and drain the spinach, and put in a bowl. Add 2 eggs, the crumbled feta cheese, the chopped basil and nutmeg. Season.

Assemble the pastry for baking. Spread the base and sides of the baking tin with a little oil.

Place the sheets of filo pastry and brush them with oil. Cover the whole baking tin, allowing them to stand out from the sides.

Pour the filling onto the filo pastry in the baking tin and spread it out. Cover with what is left of the sheets of filo pastry.

Bake at 376ºF for 50 minutes or until the filo pastry is toasted and the filling has solidified.

After removing it from the oven, decorate with honey and poppy seeds on top.
