Today we are going to cook a delicious and tasty Mediterranean quinoa salad with shrimps, a very nutritious, healthy and light dish. Quinoa is a superfood, both for its delicious flavor, more appetizing than other seeds, and for its many health benefits. The first step to cook our quiona salad will be to rinse the quinoa, millet and brown rice to boil them. Let cook over medium heat for about 25 minutes minutes.
Once boiled, we will drain and let cool for half an hour.
We´ll cut the avocados, carrots and tomatoes.
The next step, we will add all the ingredients inside a bowl. First, we will add quinoa, millet and rice on the base. Then we will add the avocados, carrots and reduced sodium green olives. Finally we add shrimp.
We´ll mix all the ingredients and season with soy sauce and extra virgin olive oil.
