1
Dissolve the fresh yeast in the hot water.
2
In a bowl, mix the flour, sugar and salt.
3
Add the milk along with the oil, vanilla essence and egg.
4
Mix all the ingredients well and begin to knead. The dough must be stretchy and not sticky. If it is sticky, it will need a little more flour.
5
Form a ball with the dough and place it in a bowl with a drop of olive oil so that it does not stick. Cover with plastic wrap and put in a warm place so that it doubles or triples in volume.
6
After it has risen, remove the dough and knead again.
7
Using a rolling pin, roll out the dough so that it is approximately 1cm thick.
8
Using a plating ring, form the doughnuts. The make the hole of the doughnut with the neck of a bottle.
9
Place on grease-proof paper and allow to double in volume. This will take another two hours. Place a clean cloth over them and leave to rest.
10
Fry in plenty of oil and drain on kitchen paper.
11
Sprinkle with icing sugar and serve with red berries (raspberries and cranberries).
