Heat the oven to 360 ºF. Prepare a baking tray.

The first step is to prepare the filling. Mix the peeled sliced peaches with the brown sugar, pure maple syrup, lemon juice, vanilla, cinnamon, nutmeg and salt. Pour the mixture into the baking tray pre-greased with olive oil and bake for 10 minutes. Remove from the oven and place to one.

The next step is to prepare the top. Mix the gluten-free flour with the sugar, yeast, baking powder and salt. Then add the olive oil and milk, stirring well to ensure the dough is uniform. Knead the dough and stretch it over the fruit mixture.

Make a small hole in the middle to allow the filling to breathe.

Anoint the pie with beaten egg and sprinkle the sugar and cinnamon on top.

Bake for 40 minutes until it is slightly browned and the top is well cooked.

Leave it to cool in the oven for 5 minutes. Serve hot with vanilla ice cream.
