The weekend is here, and it’s time to share something sweet at the table. Today we will make a chocolate mousse, a classic for "chocoholics". The mousse combines the intense flavor of chocolate with a delicious inner texture filled with air bubbles. Additionally, it is an easy dessert or afternoon snack to prepare. You can use whatever chocolate you prefer, but ideally it should have over 70% cocoa. We will thereby avoid it being too sweet and will not use sugar, as the chocolate contains its own sugar which is more than enough.

First, chop the chocolate and put it in a bowl. Add the olive oil and melt it in a bain-marie or in the microwave. Once it has melted, mix the chocolate well.

Separate the egg yolks from the whites. Set aside the egg whites and add the yolks to a bowl with the chocolate, mixing everything well with a whisk and leaving he mixture to cool.

Put the egg whites in a bowl with a pinch of salt and mix until they form stiff peaks.

When the chocolate mixture is cold, add the stiff egg whites, mixing everything by folding in with a spatula to maintain the spongy texture.

Divide the mousse into individual containers and leave to cool for at least 2 hours.

Decorate with whole or sliced strawberries and fresh mint leaves.
