Cookie stuffed brownies Recipe!

What better way to celebrate it being Friday than with a very sweet afternoon snack? Today we suggest you make this delicious cookie stuffed brownies Recipe!

Once you try it, you won’t be able to stop eating it! The secret that makes this dessert so good is the brownie mixture of chocolate, Oreo and chocolate chip cookie dough. Irresistible!

Ingredients (16 brownies)

  • Brownie layer
    • 1/5 cup of light olive oil
    • 1 ¼ cups of organic wholemeal panela sugar
    • ¾ cup of cocoa powder
    • ½ tsp of salt
    • 2 tsp of vanilla extract
    • 2 large free-range eggs
    • 1/2 cup of sifted flour

    Oreo layer

    • 1 packet of Oreo cookies.

    Cookie Dough layer

    • 1/2 cup of light olive oil
    • 1 cup of organic wholemeal panela sugar
    • 1 large free-range egg
    • 1 1/4 tsp of vanilla extract
    • 1 1/4 cup of sifted flour
    • 1/2 tsp of salt
    • 1/2 tsp of baking soda
    • 1/2 tsp of yeast
    • 1 cup of chocolate chips


  1. To make the brownie, add the light olive oil to a medium sized pan to heat.
  2. Next, add the panela sugar and cocoa powder to the oil. Mix with a wooden spoon and remove the mixture from the heat. Leave to cool for a few minutes.
  3. Add the salt, vanilla extract and eggs. Beat with the wooden spoon until the eggs are mixed in. Add the flour and keep beating. Set aside.
  4. To cook the cookie dough layer, add the oil to a pan to heat. Next, add the panela sugar and mix. Remove from the heat and leave to cool for a few minutes.
  5. Add the egg and vanilla and beat well with a wooden spoon.
  6. While mixing, add the flour, salt, baking soda and yeast. All ingredients must be very well mixed with the wooden spoon.
  7. Once the ingredients are well mixed and we have a firm dough, add the chocolate chips and set aside the mixture.
  8. Heat the oven to 175ºC and line a 30×30 centimeter mold with baking paper.
  9. First add the cookie dough base, next the Oreo cookies covering the whole base without overlapping, and finally add the brownie.
  10. Bake for 30-35 minutes or until a fork inserted comes out clean.
  11. After this time, remove the mold from the oven, take out the brownie and leave to rest for 2 to 3 hours before serving.
  12. Serve with a scoop of vanilla ice cream and a large glass of cold milk. Delicious!
