Today we are making delicious coconut cookies that will amaze the whole family as an afternoon snack or breakfast. The dough is very soft, so they are perfect for making with young cooks, who will be able to shape them by hand.

Mix Goya Light Flavor Olive Oil with the sugar. Next, add the egg and vanilla.

Once the ingredients are mixed together well, add the grated coconut, mixing well so that there are no lumps, then add the flour and a pinch of salt.

Mix well until the dough is not sticky, and wrap in plastic wrap, leaving it to rest in the refrigerator for half an hour.

After this resting time, shape the cookies into balls and place them on a baking tray lined with baking paper to prevent them sticking. Sprinkle the cookies with a little grated coconut.

Preheat the oven to 355ºF and bake for 15 or 20 minutes. When they begin to turn golden around the edges, the cookies are ready.
