Christmas is characterized by many things: green and red decorations, trees, wreaths and seasonal food. One of the most popular preparations is Christmas cake with fruit macerated in liqueurs. If you don’t want to finish your meal with nougat, we suggest making this delicious cake with fondant icing, almonds and cranberries.

Add all the dry ingredients to a bowl and mix together.
Lightly beat the eggs, then add the oil and water.
Add the wet ingredients to the dry ingredients, mixing little by little with a spatula, making folding movements. Add the marinated fruits, mixing them well into the cake mixture.
Preheat the oven to 170ºC.
Grease and flour a cake tin and pour in the mixture, baking for approximately one hour, or until a knife inserted comes out clean.
When ready, remove it from the oven and wait for it to cool to remove it from the mold. To decorate we can use icing sugar, chocolate or fondant with almonds and cranberries.
