Black Bean – Feta and Quinoa Bowl Recipe!

The weekend is over! Start your weekly routine full of energy with this tasty and healthy black beans, feta and quinoa bowl. If you like salads on a daily basis or you want to have a balanced diet rich in nutrients, this delicious and colorful bowl full of flavors is the best choice for your lunch on Monday!
















Ingredients (4 pax.)

  • 0,4 lb. Quinoa.
  • 0,4 lb. Black beans.
  • 1 red onion, chopped.
  • 1 avocado.
  • 0,2 lb. Sweet corn.
  • 0,4 lb. Feta cheese cut into dice.
  • Small spoonful of cilantro.

For seasoning:

  • 1 finely chopped chile.
  • 2 cloves garlic, chopped.
  • 2 tablespoons chopped cilantro (we will reserve 1 small teaspoon for final decoration).
  • Two limes juice.
  • 2 tablespoons of extra virgin olive oil.
  • Salt.


  1. First, we will prepare the quinoa. We will cook in a pot over medium heat, adding quinoa and double water (about 500 ml) with salt.
  2. When the water breaks to boil, reduce the heat by cooking 15 minutes with the pot covered.  Once the water has been absorbed, we will remove from the fire. We reserve it.
  3. In a large bowl, mix quinoa, beans, onion, avocado, sweet corn and feta cheese. We will reserve cold while we prepare the dressing.
  4. In a bowl, we will mix the seasoning ingredients that we will add to the salad.
  5. As a final touch, we will add a small spoonful of cilantro.
