Healthy avocado and poached egg sandwich Recipe!

Begin your day with this tasty avocado and poached egg sandwich, a healthy and perfect source of energy! The mashed avocado and egg yolk form a perfect combination of protein and healthy fats.

Aceite de oliva sabor suave /light flavor olive oil

 

 

 

 

Ingredients

  • 1/2 ripe avocado.
  • 1 free-range egg.
  • 2 slices of wholemeal bread.
  • 1 teaspoon of light olive oil.
  • 1 teaspoon of lemon juice or vinegar (white or apple cider vinegar).
  • 1/2 cup of green salad or baby spinach, optional.
  • Salt and ground black pepper.

Elaboration:

  1. First cook the egg with salt and lemon juice or vinegar on a low heat. Do not let the water boil. If it begins to boil, reduce the heat.
  2. To poach the egg, break it into a small bowl or cup and pour it into the water.
  3. Cook on a low heat for 3 to 4 minutes until the egg white is solid, but the yolk is still liquid. Remove and place on a paper towel to absorb the excess water.
  4. Mash the avocado with the oil, salt and pepper until it has a puréed texture.
  5. Make the sandwich, putting the green salad or spinach on the slice of bread, then the avocado purée, with the egg on top, completing the sandwich with the other slice of bread.
